Cabin Cooking: Tortilla Soup
Soup is a quick, comforting, and easy food to prepare at the cabin. When all the contents are on hand in the fridge and pantry, it's doubly easy.
Here's my take on Tortilla Soup.
Tortilla Soup for Two
3 corn tortillas
oil for frying
4 cups water
2 pkg chicken bullion
1/4 chopped onion
2 cloves garlic
1 cup diced tomatoes
1/2 can hominy
1 cup leftover chicken or pork
1 bay leaf
chili flakes
cumin
Lawry's Lemon Pepper w/ Salt
grated Mozzarella cheese
diced avocado
The key ingredient is a crispy corn tortilla strip topping. Fry the strips in a small amount of oil and keep them warm in the oven while the soup cooks.
Bring water to a boil and add bullion packages. Dice onions, garlic, tomatoes, and meat and add to the soup mixture. Drain and add half a can of hominy (freeze the rest for later). Add a bay leaf (remove before serving) and season to taste with chili flakes, cumin, and Lemon Pepper.
Allow the soup to simmer for half an hour until the ingredients are soft and the flavours marry.
Serve with grated cheese, diced avocado and those crispy tortilla strips (if any are left that is). -- Margy

DeleteI make a similar soup except add shredded chicken and instead of regular tomatoes use a cup of salsa. Nothing like it in the winter, my favorite soup of all time :)

ReplyDeleteI love Chicken tortilla soup (and always glad to get a recipe for two), but I think I'll substitute whole-kernel corn for the hominy. Hope you are having a wonderful week!
