I use the giant zucchini - seed them and chop just like cucumbers - same with bread and butter pickles. Seems it is easier to come up with lots of big zucchini than with enough cucumbers and the taste is the same. I do love your little "canner" - perfect for small batches.JoAnn ( Scene Through My Eyes)https://www.blogger.com/profile/12621061028973446378noreply@blogger.comtag:blogger.com,1999:blog-35356005.post-16331813983299637662016-08-27T14:14:25.289-07:002016-08-27T14:14:25.289-07:00I've never made this! Greek Kleftika.
Basically chunky pieces of lamb cooked in a clay oven with potatoes, onions, carrots, fresh herbs such as rosemary, thyme and coriander.
Then the preserved lemons (2).
The wonderful aromas of spring lamb with the lemon and herbs permeating down the cobbled little streets, down to the sea still make me feel warmhearted.
Each Taverna would have a clay oven standing just outside where they would cook their daily specials, including of course, the ubiquitous Kleftika.
I think your pickled cucumbers would go well with many of the Greek specialities !
Best wishes,
Di.
ABCW team.xx
Trubeshttps://www.blogger.com/profile/15297883125832619352noreply@blogger.comtag:blogger.com,1999:blog-35356005.post-60970180291148363432016-08-27T05:15:06.465-07:002016-08-27T05:15:06.465-07:00Nice recipe! I only have two or three cukes ripe at any one time so I was desperate for a small batch recipe.
